Just a simple sandwich...

I am expecting my nephew from London late tonight. So after an hour of body pump at the gym, rushed home and got busy cooking for tomorrow night's dinner (chicken biryani and kebabs) and totally forgot about making tonight's dinner! My husband of course loved pointing out that I was slipping as the spicy and racy blogger leaving her own man hungry for the night! Ah, the guilt trip. While I was toying with the idea of ordering food in, my nephew Tayseer who lives in the same building who had dropped by to say hello and was all hungry, came to my rescue! With his help, we whipped up a real yummy sandwich in no time and that was dinner!!!!

Roasted Eggplant and Zucchini Sandwich


Most of the ingredients are home made!

-- Slices of my whole wheat bread with fennel seeds (made by my lovely bread maker)
-- Hummus made by me this weekend (I usually roast a whole garlic in olive oil wrapped in foil in the oven for 45 min and throw it in in a processor with a can of chickpeas drained, tahini paste, olive oil, lemon juice and some salt and freshly ground pepper. Sprinkle with some paprika et voila)
-- Harissa (Tunisian hot sauce)
-- Roasted eggplant slices
-- Roasted zucchini slices
-- Feta Cheese
-- One fried egg per sandwich. I like the yolk runny so it coats the sandwich when you bite into it.
-- Some basil leaves from my potted plant.

Process:

1. Toast your bread to your liking.
2. Slather one side of the bread with hummus, the other side with harissa. Sprinkle some good quality olive oil on top (Mus got me a bottle from a wine press in CA that is sublime)
3. Top the sandwich with the eggplant, zucchini, feta, egg and some basil leaves. You can sprinkle some freshly ground pepper.
4. And crunch into a piece of heaven. (Should have made the sandwich into a panini really. But was pressed for time. Remember, I am making a big dinner for tomorrow night?) The runny egg feels divine! Of course, having all fresh ingredients and mostly homemade helps!

Not sure if I will be able to blog tomorrow as I have guests over. But gave you a hummus recipe in this recipe itself. So that counts for one more recipe :-)

  2. The economical me would say: you should roast both the eggplants and zucchini at home. The lazy me said: no, I bought them in a jar full of olive oil, spices and vinegar.
