Go Grill!!

I found an economical, easy and of course YUMMY work week lunch recipe. All you need is your stove grill, any veggies of your liking, olive oil, some spices, feta cheese or any other cheese of your liking and some good bread. And if you are anything like moi, these days I even bake my own bread!!!! Ok, I lied. But thanks to my cousin Shoma's recent gift, I am now a proud owner of a bread maker. And what a joy it is! Throw in the ingredients inside the bread maker, a couple of clicks and it does everything for you: kneading, giving the dough time to rise, baking and a simple click to let you know that the bread is ready in a couple of hours. Or rather, the intoxicating fresh smell of the bread wades through the apartment and lets you know when it's time to dig in :-)

Ok, back to the work week lunch recipe. I did say it was easy, quick and super yummy! Well, I am not lying. I like to use eggplants and zucchini. So here goes!

Grilled Eggplant and Zucchini Sandwich
Ingredients:
-- One medium sized eggplant
-- One Zucchini
-- 1/2 cup Olive oil with 1/4 tsp red chilli powder (you can avoid if you don't like spicy), 1/4 tsp coriander, 1/4 tsp cumin, 1/4 tsp pepper and salt to taste.

Process:
1. Cut the eggplant and zucchini in thin slices, but make sure the length is about 3 inches or the size that best fits your bread. Just make sure it's not too thick.
2. Set the grill on the stove and turn on the heat to medium high.
3. Brush the two sides of the vegetables with the oil mixture.
4. When the grill is hot (in about 3-4 min), place the veggies on the grill. They should sizzle. If need be, turn down the heat a little. As you can see, my eggplants got a little more brown than I wished. You only have to grill them about 2-3 min each side or even less. You will get nice grill marks.

Save the grilled vegetables in a container and once cooled, put in the refrigerator. To build your sandwich, all your need is two pieces of bread, dash of olive oil, stack the veggies alternating them and a slab of feta cheese. I am telling you it is delish! Go ahead and get creative and even make a panini. I don't have a fancy panini press. But I got myself a brick from a construction site nearby which I wrapped in double aluminium foil and use that as my panini press! ;-) Pretty creative huh? The end result is just as goooood!

    I want to see some meat recipes... Ki shob veggie and maach er recipe boshacho (not that they're not yummy, maybe).
