Keep the sweets rolling

While my earlier dessert may be easy on the love handles, I would like to share another recipe that is light sweet. It does not use agave nectar, so go easy if you're watching your sugar intake. Everytime I made it, it seemed to be a crowd pleaser. Light and refreshing especially after a heavy meal.

Orange Pudding Cake



Ingredients:
1 whole large orange fruit (I used two minneola oranges)
1½ cup caster sugar
1½ cup milk
½ cup softened butter
½ cup all-purpose flour
3 eggs
1 teaspoon baking powder
Icing sugar
Process:
Put the oranges in a pot filled with water and cook it on medium heat for about 2 hours. Once cooled down, open it to eliminate seeds and other hard parts then put it into a food processor with all the other ingredients except the icing sugar. Process until you have a very smooth mixture. Grease a 5-6 cup capacity pan (9'' cake pan is fine) and pour into the mixture then bake in a 350F preheated oven for about an hour or until the surface is golden. Before serving dust the pudding with icing sugar or you can decorate with sliced strawberries like I did.
