With hubby away, it's time for some nutty time :-)

It's a beautiful sunny day today. Can't believe just yesterday, everything was drab with constant drizzle, gray everywhere, a little chilly and most of all, my heart feeling heavy with Mus going away for a conference. So decided to perk up and have some "me" time. And what best to do that other than browse tastespotting.com. Ok, I know it's lame. But that prompted me to take a trip to Whole Foods and get all the necessary ingredients to get all nutty! After all, hubby is away ;-) ;-) ;-)

Talking about nutty, I have a confession to make. I have recently developed a huge crush! Yes!!!!!! And it's Greek!!!!!! Blush... I know, I know it's all wrong. But it's really healthy. I promise. I am referring to Greek non-fat yogurt of course. What did you think?

Nutty Treats for a NUT like me


I wish I could share the mood with you here: good ole Eric Clapton playing real loud in the background, the windows all open to let in the afternoon sunshine and my basil plant looking nice and healthy on my window sill. And what best to enjoy "me" zen time other than a bowl of greek non-fat yogurt, topped with some fresh strawberries and the nutty goodness. It's super easy to make and sugar free. So girls, enjoy indulging in being a little nutty.

1/4 cup unsalted peanuts (can substitute with sliced almonds)
1/4 cup shelled green pumpkin seeds
1/4 cup sunflower seeds
1/4 flaxseeds
1/2 cup toasted wheat germ
1/2 cup quick oats
1/4 cup light agave nectar syrup

In a large skillet, toast the peanuts/almonds and pumpkin seeds over medium-high heat, stirring, for about 1 minute. Add the sunflower seeds, flaxseeds, quick oats and cook, stirring for 2 minutes. Throw in the wheat germ and keep toasting and shaking for another minute. Put the nutty mixture in a mixing bowl. Stir in the agave syrup and a pinch of salt and set aside. Let it cool. But if you are anything like me, start crunching on the mixture right away. Once the mixture is cooled, you can store in an air tight container or put in a ziploc and take with you to work to enjoy guilt free snack.

In a glass, put in non-fat plain yogurt (preferably greek or any yogurt of your liking), add in strawberries or any fruit you like. You may skip the fruit part all together. Drizzle some of the nutty mixture and enjoy as I am right now. Can't send you a picture as I have a white creamy moustache on my upper lip :-)

To the ladies out there, if you have not been nutty in a long time, take some time and get nutty today!!!!
